My Veg Story
Back in 1985 at the age of 19, I stopped eating all meat for ethical reasons. I didn't think going veg was that complicated since it meant just not eating animals. What I didn't know back then was how to eat a proper and healthy veg diet. My diet consisted of french fries, chocolate bars, pasta, muffins, processed foods and bread. Within the first 5 years, I had lost muscle mass, had low energy, bad skin, stomach troubles, weight gain and I felt irritable all the time. Back in 1985, there was no access to quick education like we have today with the internet and social media, so I was pretty much just winging it.
It was 6 years into my veg diet that I started to eat chicken and some fish again because I just felt so miserable because I wasn't eating a proper vegetarian diet. I didn't know what felt worse: eating animals again or the fatigue. My MD told me my health depended on eating meat. In retrospect, I realize that was totally untrue. Doctors and many Natural Healers have absolutely no real veg nutrition training so they are unclear about how to eat a veg diet for optimum health. It was tough to find any practitioner who had experience in veg eating so I had to seek out other veg people to help me. So I took the plunge again and became a "committed for life vegetarian". I've not looked back.
To make my life even more exciting, in 2011, I also went 100% gluten free. I made the decision to go gluten free to help aid in my recovery from Lupus and Lyme. In the first 6 weeks, my entire life changed for the better. The inflammation in my body was at an all-time low. The first year of being GF was REALLY hard because there was not a lot of gluten free selections nor was I that educated on the process. I spend tons of time researching how to be gluten free and be healthy doing it.
Along with my professional training and many years of eating a vegetarian /GF diet, I have the extensive knowledge and educated needed to be healthy and to teach others how to be healthy in this lifestyle as well.
The shift is enlightening and I feel stronger than ever.
