Vegan and Gluten Free Shepard Pie Madness

Recipe: (This recipe makes one large Shep Pie) I Always triple the recipes Bottom: 2 large chopped onions 2 cans black beans (rinsed) 1/2 cup water 1 cup cooked brown lentils Celery salt pepper Masala spice coconut oil Gluten free BB! sauce Fry onions is coconut oil for 5 mins in large skillet pan Add beans and 1/2 cup water and let simmer for 5 mins. Take a masher and mash beans until choppy Add cooked lentils, all the spices and bbq sauce and let simmer for 8 mins Center: Organic corn kernels (you can also add cooked carrot slices if you like) Top: 2 Large Sweet Potatoes 2 large Yellow (or white ) potato 1 large tbsp coconut oil (or butter) 1 cup almond (or coconut) milk

Garlic Spice MASH WHITE AND SWEET POTATOES SEPARATELY: Boil potatoes, drain and mash. Add coconut oil (or butter), garlic spice and milk and whip with mixer until fluffy (do this both separately for the sweet and the white potatoes) Add bottom mix in 8 x 8 casserole dish Add corn to middle Add half the sweet potato mix and half the white potato mix to top and smooth out. Sprinkle with Paprika Bake in over at 375 for 35 mins
